Planning A Picnic and a President's Choice Giveaway
One thing on my summer bucket list that I haven't completed yet is to have a picnic. When planning a picnic, good food is essential and earlier this summer at the President's Choice Summer Getaway, I had the chance to learn a few delicious summer recipes from Andrea Bucket, Executive Sous Chef at George Weston Ltd. My favourite fruit are strawberries so I've been meaning to recreate this recipe:
GRILLED PC® HALLOOM WITH STRAWBERRIES & BASIL
INGREDIENTS:
1 pkg PC® Halloom Semi-Soft Unripened Cheese, sliced into 1⁄4 inch slices
3⁄4 cup Sliced strawberries
4 Basil leaves, roughly chopped
1 tbsp PC® Organics Pure Honey
1⁄4 tsp Sea salt
1 tsp Pepper
METHOD:
1. Preheat grill to medium high heat
2. Place Halloom cheese on grill and cook for about 3 minutes per side
3. In the meantime, stir together strawberries, basil, honey and pepper and set aside
4. Place grilled Halloom cheese on a serving platter and top with strawberries
When we prepared this at the getaway, I was surprised how well the sweetness of the strawberries and honey balanced the heartiness of the cheese. *Tip: here's an easy way to hull strawberries*. For a picnic, I'd pack these up in a mini mason jar (because who doesn't love mini things!) and give everyone their own individual serving. You'll need a few more elements to make the perfect picnic so here are my picnic essentials:
To me, picnics are just as much about the ambience as they are about the food. I need to have a soft blanket and durable plates to go along with the salads, fruit, and sweets (like the PC® S'mores Dessert Cookies which would make a great late afternoon treat).
